Setting a data type on an extracted variable (for example email) forces validation, so the data you get back matches the type you expect.

Without it, when the caller never gave the information or gave it incorrectly, the AI may fill the field with junk such as a made-up address or a note like "no email found". With the email type set, you get a value in a real email address format.
